Ingredients

- 2 lbs beef chunks, trimmed
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 carrots, sliced
- 2 potatoes, diced
- 1 cup beef broth
- 2 tbsp tomato paste
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tbsp olive oil
Instructions
- Heat olive oil in a pan over medium-high heat. Brown the beef chunks on all sides.
- Transfer the beef to the crockpot.
- Add chopped onion, minced garlic, sliced carrots, and diced potatoes to the crockpot.
- In a bowl, mix beef broth, tomato paste, salt, pepper, and thyme. Pour over the beef and vegetables.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Serve hot.
Notes
- For extra flavor, sear the beef well before adding to the crockpot.
- Adjust seasoning to taste before serving.
- Add other vegetables like celery or mushrooms if desired.
