  • 1 tsp dried thyme
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a pan over medium-high heat. Brown the beef chunks on all sides.
  2. Transfer the beef to the crockpot.
  3. Add chopped onion, minced garlic, sliced carrots, and diced potatoes to the crockpot.
  4. In a bowl, mix beef broth, tomato paste, salt, pepper, and thyme. Pour over the beef and vegetables.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Serve hot.
