Ingredients

- 2 boneless chicken
- 1 cup BBQ sauce
- 2 medium sweet potatoes
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 cup shredded lettuce
- 1/2 cup diced red onion
- 1/4 cup chopped cilantro
Instructions
- Preheat oven to 400°F.
- Coat chicken with BBQ sauce and bake for 25 minutes.
- Peel and cube sweet potatoes, toss with olive oil, salt, and pepper.
- Roast sweet potatoes for 20 minutes.
- Slice cooked chicken.
- Assemble bowls with sweet potatoes, chicken, lettuce, red onion, and cilantro.
- Drizzle with extra BBQ sauce if desired.
