- 2 cups dried black-eyed peas
- 4 cups water
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup barbecue sauce
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Rinse the black-eyed peas and soak them in water overnight.
- Drain the peas and place them in a pot with 4 cups of water. Bring to a boil, then simmer for 45 minutes or until tender.
- Heat olive oil in a skillet. Add diced onion and minced garlic, sauté until soft.
- Drain the cooked peas and add them to the skillet with the onions and garlic.
- Stir in the barbecue sauce, salt, and black pepper. Cook for 10 minutes on low heat.
- Serve hot.
Notes
- Soaking the peas overnight reduces cooking time.
- Adjust barbecue sauce quantity to taste.
- Store leftovers in an airtight container for up to 3 days.
