Ingredients

  • 2 boneless, skinless chicken , cubed
  • 1 cup orzo pasta
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1/2 red onion, chopped
  • 2 cloves garlic, minced
  • 3 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups chicken broth
  • 1/4 cup grated parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken cubes and cook for 5-6 minutes until browned.
  3. Add bell pepper, zucchini, red onion, and garlic. Cook for 3-4 minutes.
  4. Stir in orzo, balsamic vinegar, oregano, salt, and pepper.
  5. Pour in chicken broth and bring to a boil.
  6. Reduce heat to low, cover, and simmer for 10 minutes until orzo is tender.
  7. Remove from heat and sprinkle with parmesan cheese if desired.
