- 2 boneless, skinless chicken , cubed
- 1 cup orzo pasta
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1/2 red onion, chopped
- 2 cloves garlic, minced
- 3 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups chicken broth
- 1/4 cup grated parmesan cheese (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken cubes and cook for 5-6 minutes until browned.
- Add bell pepper, zucchini, red onion, and garlic. Cook for 3-4 minutes.
- Stir in orzo, balsamic vinegar, oregano, salt, and pepper.
- Pour in chicken broth and bring to a boil.
- Reduce heat to low, cover, and simmer for 10 minutes until orzo is tender.
- Remove from heat and sprinkle with parmesan cheese if desired.
Notes
- For extra flavor, marinate chicken in balsamic vinegar for 30 minutes before cooking.
- Substitute vegetable broth for a vegetarian version.
- Add cherry tomatoes or spinach for more veggies.
