- 1 cup coconut milk
- 1/4 cup fresh basil leaves, chopped
- 1 tbsp ginger, minced
- 2 cloves garlic, minced
- 1 tsp turmeric
- 1 tsp cumin
- 1/2 tsp coriander
- 1 tbsp olive oil
- 1 cup cooked rice
- Salt to taste
Instructions
- Heat olive oil in a pan over medium heat.
- Add ginger and garlic, sauté for 30 seconds.
- Add chicken cubes and cook until browned.
- Stir in turmeric, cumin, and coriander.
- Pour in coconut milk and simmer for 10 minutes.
- Add chopped basil and salt, cook for 2 more minutes.
- Serve hot over cooked rice.
