Description

Ingredients

  • 2 boneless, skinless chicken , cubed
  • 1 cup coconut milk
  • 1/4 cup fresh basil leaves, chopped
  • 1 tbsp ginger, minced
  • 2 cloves garlic, minced
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/2 tsp coriander
  • 1 tbsp olive oil
  • 1 cup cooked rice
  • Salt to taste

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add ginger and garlic, sauté for 30 seconds.
  3. Add chicken cubes and cook until browned.
  4. Stir in turmeric, cumin, and coriander.
  5. Pour in coconut milk and simmer for 10 minutes.
  6. Add chopped basil and salt, cook for 2 more minutes.
  7. Serve hot over cooked rice.
