- 2 lbs boneless, skinless chicken or thighs
- 1 cup chicken broth
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tbsp olive oil
Instructions
- Place chopped onion and minced garlic in the bottom of the crockpot.
- Season chicken with salt, pepper, paprika, and thyme.
- Heat olive oil in a pan and lightly brown chicken on both sides.
- Transfer chicken to crockpot and pour chicken broth over it.
- Cover and cook on high for 4 hours.
- Shred or serve chicken whole with cooking juices.
