Ingredients

- 2 lbs beef chuck roast
- 4 carrots, chopped
- 4 potatoes, diced
- 1 onion, sliced
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried rosemary
Instructions
- Place beef chuck roast in the crockpot.
- Add carrots, potatoes, onion, and garlic around the roast.
- Pour beef broth over the ingredients.
- Sprinkle salt, pepper, thyme, and rosemary evenly.
- Cover and cook on low for 12 hours.
- Shred the beef before serving.
Notes
- Trim excess fat from the roast for a leaner dish.
- Add more broth if needed during cooking.
- Stir halfway through if possible.
